WORKSHOPS The Art of Food & Wine
If you are staying at Blair Athol Estate Wollombi over the durarion of one of our Food & Wine Workshops perhaps you would like to take advantage of a 30% discount on all Workshops*. You can choose to participate in the learning and hands on process of the workshop or head over to the Homestead dinner table for a feast with food and wine enthusiasts.
All worksops and luncheons are available to the public, however a booking and confirmation must be processed before entry onto the property.

in November, join at My Father’s Table and become part of creating an authentic Middle Eastern Extravaganza! Learn how to make tabouleh, hummus, babaganoush, kibbe, kafta and shanklish. Book an extra seat for your partner & /or friends to join the feast at 3pm. This workshop is about sharing recipes, traditions, food and love.Arriving at My Father’s Table at the stunning Luxury Accomodation venue Blair Athol Estate Wollombi at 10am, we will kick off the day preparing mezza dishes and salads. Rita will guide you on how to make traditional, authentic Lebanese sides such as tabouleh, hummus, babaganoush and shanklish.Then Rita will coach you on preparing the mains of the day; kibbe, kafta, shish kebabs & shish tawook.
Book in your partner and friends ($38 pp) to join us at 3pm when we will fire up the bbq, turn up the music and enjoy the extravaganza we have created together!

Classic Cake Series with Marguerite Winter | 15th of November 2015 | $128.00 p/p
Marguerite has edited the lifestyle pages of the Australian Financial Review Magazine for many years and these days is a freelance travel writer, specializing in food and wine destinations. She is an enthusiastic cook with a repertoire of classic cakes and puddings from a number of world cuisines. Marguerite will draw upon her repertoire for the Blair Athol Estate cake-making sessions, presenting the likes of the now-universally loved orange and almond cake from the Middle East, which she has been making since the mid-1970s; the simplest and richest chocolate cake from the French cuisine that you can double or triple in a flash; a lemony Sicilian ricotta cake; a very sophisticated olive oil and sauterne cake; an almond cake embedded with fig and raspberry and a stunning rhubarb cake for those who think they don’t like rhubarb. Sweets for the sweet!Includes all ingredients and utensils, High Tea & Bocce on the the lawn from 3pm-5pm with local Stonehurst Champanoise (only 12 spots available).

Presentation and produce quality being key. Learn savvy little life hacks and the art of multitasking to pull of a sophisticated menu and still be able to mingle and enjoy yourself at your next dinner party.

Learn to make Bloody Mary Oysters, Classic Margarita w/ Fried Baby Sardines, Dry Lychee Martini with dehydrated Orange w/ Pecking Duck Pancake.
Cleverly synchronise your Tasting Plates of Miso & Sesame slow roasted Eggplant with Lamb Cutlet, Slow Roasted Pork Belly with Caramelised Kumera and Pickled Fennel, local Rainbow Trout with Earl Grey tea, Kale and Cucumber and lastly Seared Scollop with Bush Lemon and Cured Pickled Pork all with local premium matching wines.
